Kansas City has more than ninety BBQ joints, which range from Arthur Bryant-esque establishments (also known as grease houses) to fine dining Hibachi restaurants.

The chopping or pulling is vital, as it allows the small meat pieces to better soak up the sauce. Unlike many other regions of the country, Carolina-style BBQ is seldom served sliced.

In Texas, the preferred choice of meat for grilling is brisket. Unlike other regions, the preparation of meat is very simple, and cooks use wood smoke for the purpose. The wood could be hickory, oak or mesquite.

In terms of time, an adequately prepared brisket may spend as much as eighteen hours in the pit, which produces a pinkish tinge, especially around the edges of the slices.

This natural band of color is called the smoke ring, and is found in meat slices which are smoked for extended periods of time. Also, a majority of pitmasters in Texas do not even consider using mop sauce or rubs.

Texan BBQ sauces are based on chili powder and tomatoes and are quite thin and vinegary. This is because people do not prefer a lot of sugar.

As per the Texas Restaurant Association, there are over 3,800 BBQ joints in Texas. A majority of them serve pork shoulder, ribs, turkey, sausage (jalapeño sausage is very popular these days), and other meats.

As a result, they took more care when they raised their pigs, and refused to export pork to most northern states. However, by this time, the connection between pork and the barbecue had been deeply forged.

Still, the Southerners’ penchant for pork doesn’t fully explain the diversity between their BBQ styles. To understand it, we have to look beyond American borders, to the immense influence that many colonial immigrants had on both the preparation and flavor of the meat.

1 medium chicken cut in half

1 cup of chopped green onions

½ a cup of finely chopped coriander

¼ cup of chopped mint/basil

6 minced cloves of garlic

Juice from 1 lemon

Zest from ½ lemon

1 green hot pepper diced

4 table spoons of pomegranate extract

1 table spoon of paprika powder

1 table spoon of sugar

½ cup of olive oil

Preparation time: about 5 minutes

Cook time: 40 minutes

For 2 persons

In a big bowl, mix all these ingredients together, except for the chicken, to get a delicious spicy coat.
Then lay the chicken on a baking tray (make sure it suitable for on a grill) and marinate it heavily and make sure all sides have been coated properly.
Cover with aluminum foil and place it on the Hibachi Grill (medium/high heat) for about 30 minutes.
Then remove the foil and place the chicken directly on the grill till you are completely satisfied.

Recommended to serve it with cooked roasted pasta, or grilled veggies, or a salad on the side.

Grilled vegetables:

In a bowl, put about 1 kilo of mixed vegetables of your choice, drizzle with olive oil, then season with salt and pepper as much as you like.
Add 1 tablespoon of sweat and smoked paprika, 1 teaspoon of garlic powder and some sweet chili sauce and mix it well.
Grill it on the Hibachi Grill until the hardest vegetables are properly cooked, or until they all are soft and have a nice brown crust.

Firstly, you need to preheat the grill.

There is a digital LCD control panel in front of the grill. Set the variable temperature according to your requirement, ten to fifteen minutes prior to the cooking time.

Most kinds of meat and vegetables can cook and grill perfectly at 430-450 Fahrenheit so you can safely cook within this range.

Grease the cooking surface with your choice of oil. Place meat, vegetables, or whatever you want to cook on the girdle or grill.

It is better to put things like steak, wings , corn on the cob or anything on skewers on the grill side(ribbed side) and thinly sliced vegetables on the girdle (flat side).
